To Die For Olive Oil Chocolate Chip Cookies


Yield: 12 cookies
Active Time: 10 minutes
Total Time: 45 minutes

INGREDIENTS
6 tablespoons softened ghee (or butter)
2 tablespoons olive oil
3/4 cup brown sugar
1/4 cup unbleached sugar
1 large egg
1 teaspoon vanilla extract
1 1/3 cups all-purpose flour
1/2 teaspoon baking soda
1 teaspoon sea salt
½ tsp cinnamon
¾ cup dark chocolate chips (I like to use mini). *I added oatmeal to half the batter and they turned out awesome

INSTRUCTIONS

Preheat oven to 350 degrees and line a baking sheet with parchment paper.
In a large bowl, mix together butter or ghee, olive oil, brown sugar, and unbleached sugar until light and fluffy. Mix in the egg and vanilla. In a small bowl, whisk together the flour, baking soda, cinnamon and salt. Mix the flour mixture into the sugar mixture until just combined. Fold in chocolate chips and oatmeal if you want to add it. If you have time cover the bowl and place in the fridge for 20 to 30 minutes.
Scoop out 1-inch balls of dough and place 1-inch apart on prepared baking sheet. Bake 11 to 12 minutes until the edges are golden brown while the centers remain gooey.

Whole Wheat Chocolate Banana Bread

Ingredients:

  • 3 overripe mashed banana
  • 2 1/2 tsp pure vanilla extract
  • 1 tbsp vinegar
  • 1/8 cup oil
  • 1/8 cup almond milk
  • 1/2 cup honey
  • 1/4 cup sugar
  • 1 3/4 cup whole wheat white flour
  • 1 tsp baking soda
  • 3/4 tsp salt
  • 3/4 tsp baking powder
  • 1/2 cup plus 2 tbsp cocoa powder
Directions:

Preheat oven to 350 F and line a 9×5 loaf pan with parchment paper. In a large mixing bowl, whisk together first six ingredients. In a separate bowl, combine all remaining ingredients and stir well. Pour dry into wet, and stir until just evenly combined. Transfer to the loaf pan and spread out evenly. Bake for 40 minutes or until a toothpick comes out clean. Remove the the loaf from the pan by pulling out the parchment paper, slice and enjoy!

 

Chocolate Chip Cookies

I am always experimenting with different types of the same cookie… doesn’t make sense at all, but try these dairy-free, gluten-free cookies if you are looking for something a little cleaner and lighter.Chocolate chip cookies

Ingredients:

  • 2/3 plus 1/2 cup oat flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon fine sea salt
  • 1/2 cups dark chocolate chips
  • 1/2 cup packed brown sugar
  • 1/2 cup sugar
  • 1/2 tsp cinnamon
  • 3-5 Tbsp almond milk
  • 2 Tbsp coconut oil, melted

Directions:

Combine all ingredients in a bowl, then stir in wet to form a dough – it will be dry at first, so keep stirring until a cookie-dough texture is achieved. If needed, add 1-2 tbsp extra milk of choice. Form into one big ball, then either refrigerate at least 2 hours or freeze until the dough is cold, or if you are impatient like me you can cook them right away. Once dough is chilled, preheat oven to 350 F. Form dough balls, and place on a greased baking tray, leaving enough room between cookies for them to spread. Bake 11 minutes on the center rack. They’ll look underdone when you take them out. Let them cool on the baking tray 10 minutes before touching, during which time they will firm up.
